Tough, tough question. I'll go with The Meatless Alternative though.
One thing I find interesting is the added sound effects on top of the music. For example, the seagulls/ water noise on the Scallywags maps or the thunder on the Feedback maps.

Very close second: Main Theme - there's a little voice that sings along in the game ("La La La La....") that I can't pick up on the soundtrack.
