Therefore if I cannot be telling the truth, since I would have to lie for that. (contradiction)

The case "all humans lie" doesn't apply, because then I wouldn't even be able to say this sentence, so we don't even arrive at this question.

Since I can say "all humans lie" it follows:
I'm lying.
There is at least one human that doesn't lie.
